Nutritional component in barley

Barley contains several nutritious components that promote health. These include starch (65%–68%), protein (10%–17%), free lipids (2%–3%), β-glucans (4%–9%), and minerals, with mineral content ranging from 1.5%–2.5%.

A single cup of cooked, pearled barley provides 193 calories, mostly from carbohydrates. On the other hand, one cup of hulled barley (184g) supplies 651 calories, 135 grams of carbohydrates, 31.8 grams of fiber, and 1.48 grams of natural sugars.

When compared to other whole grains, barley stands out as an excellent source of fiber, delivering 6 grams per one-cup serving. Its fiber content has the potential to lower cholesterol levels in individuals with high cholesterol and can also help reduce blood sugar and insulin levels.

Barley is also abundant in B vitamins, including niacin, thiamin, and pyridoxine (vitamin B-6). Additionally, it contains β-glucans, a type of fiber associated with various health benefits.

Furthermore, the presence of potassium, folate, iron, and vitamin B-6 in barley, combined with its absence of cholesterol, contributes to supporting cardiovascular functions.

Studies have identified different phytochemicals in barley, such as phenolic acids, flavonoids, lignans, vitamin E, sterols, and folates. These phytochemicals possess health-promoting properties, including improvements in reproduction, proper growth, and overall development of the human body.

Barley a minor cereal

Cereals are the edible seeds or grains of the grass family, Gramineae. A number of cereals are grown in different countries, including rye, oats, barley, maize, triticale, millet and sorghum.

Barley (Hordeum vulgare L.), originally from the Middle East, was one of the first plants domesticated for human consumption and was known for its vast geographical distribution. Barley has many uses, for instance it can be served as animal fodder, as base malt for beer and certain distilled beverages, and as a component of various health foods. It is used in soups and stews, and in barley bread of various cultures.

Pearled barley is eaten in soups and stews in the UK and in the Far and Middle East; barley is also used in bread (as flour) and ground as porridge in some countries.

The major parts of the barley grain are the endosperm, the embryo and their covering layers of maternal origin. The endosperm consists of the starchy endosperm and a surrounding aleurone layer (Figure 2). The starchy endosperm forms the largest morphological part of the barley grain comprising c. 75% of its weight. The function of the starchy endosperm is to serve as a nutrient storage for the growing embryo during germination.

Barley is characterized by a thick fibrous coat, a high level of ß-glucans and simply-arranged starch granules. World production of barley is about 30 % of that of corn. In comparison with corn, barley has more protein, methionine, lysine, cysteine and tryptophan.

Barley grain is an excellent source of soluble and insoluble dietary fiber (DF) and other bioactive constituents, such as vitamin E (including toco-tri-enols), B-complex vitamins, minerals and phenolic compounds.

Barley is also a rich source of tocols, including tocophenols and toco-tri-enols. Barley contains3-11% dietary fibers made up of pentosans, beta-glucan and cellulose. Barley has an attractive nutrient make-up which makes it an excellent food for health-conscious people.

Flaxseed nutritional compounds

Flaxseed is mainly considered as oilseed crop. It has been used in various forms such as flour, oil and seed. The whole flaxseed is flat and oval with pointed tips, varies in color from dark to yellow, and measures approximately 2.5 × 5.0× 1.5 mm. Flaxseed contains a seed coat or true hull(also called testa), a thin endosperm, two embryos, and an embryoaxis.

Flaxseed continues to surge forward in its recognition as a functional food, being rich in the essential omega-3 fatty acid, alpha linolenic acid and many phytochemicals. Flaxseed also provides dietary fiber and protein (flax primer) an was singled out as one of six neutraceuticals.

Flaxseed has emerged as a potential functional food being good source of α -linolenic acid (ALA), unsaturated fatty acids (linolenic acid, linoleic acid, oleic acid), soluble flaxseed fiber mucilage (d-Xylose, L-Galactose, LRhamnose, d-galacturonic acid), lignans (secoisolariciresinol diglycoside (SDG)), monoglycerides, triglycerides, free sterols, sterol esters, hydrocarbons (protein), balast, phenylpropane derivatives.

Flaxseed also contains monounsaturated fatty acids (MUFAs), such as oleic acid. ALA and linoleic acid are both essential fatty acids (EFA), meaning they cannot be synthesized by the human body and must be derived from the diet.

ALA is beneficial for infant brain development, reducing blood lipids and cardiovascular diseases. Flaxseed proteins are relatively high in arginine, aspartic acid and glutamic acid whereas lysine, methionine and cystine are limiting amino acid. Flaxseed dietary fiber exhibits positive effect to reduce constipation, to keep better bowel movement and as hypocholestermic agent.

Flaxseed is the richest source of plant lignans, which are phytoestrogens and serves as precursors in the production of mammalian lignans. SDG is the predominant lignan in flaxseed with minor amount of pinoresinol and matairesinol. It was suggested that lignans may act to prevent oxygen radical production, thus effectively reducing atherosclerosis. It also may have anticancer property. At some extent, SDG helps in bone development.

Cereal grasses such as wheat, oat, rye, barley and brown rice are most familiar cereal grasses are one of the “functional foods” that is gaining recognition as a potential nutritional product which has medical and health benefits. The cereal grass such as barley was domesticated about 10,000 years before the present in the Fertile Crescent and became a founder crop of Neolithic agriculture.

Protein content of corn

Corn has the lowest protein content of the cereals (7.1%) but a high starch content (65.7%) and a fiber content of 1.5%. It has the highest fat content of grains or legumes (4%).

The protein contend of corn is inversely related to starch content and grain yields. Bulk density is related to increased starch content when other factors are constant.

The amount of nitrogen in the soil, and when it is applied significantly affect protein content.

The development of hybrid strain has improved the yield of field corn, which is lower in protein than wheat, and like all vegetable protein, including wheat, corn is deficient in some amino acids and so does not provide a complete protein for humans.

Corn is especially deficient in the amino acid, but a variety of high-lysine corn has been developed that may eventually have a great impact on human nutrition on some parts of the world.

Oats flour

Milling produces oat flour. Oat flour contains a natural antioxidant that increases the stability of oat flour.

Ground from whole grain oats, oat flour lends a slightly sweet flavor and a tender texture to baked goods, reducing the need for fat and sugar.
