Nutritional component in barley

Barley contains several nutritious components that promote health. These include starch (65%–68%), protein (10%–17%), free lipids (2%–3%), β-glucans (4%–9%), and minerals, with mineral content ranging from 1.5%–2.5%.

A single cup of cooked, pearled barley provides 193 calories, mostly from carbohydrates. On the other hand, one cup of hulled barley (184g) supplies 651 calories, 135 grams of carbohydrates, 31.8 grams of fiber, and 1.48 grams of natural sugars.

Barley (Hordeum vulgare L.) ranks fifth among field crops in grain production in the world after maize, wheat, rice and soybean.

The largest part of barley production (up to 70%) is being used as animal feed, about 21% is intended for malting, brewing, and distilling industries, leaving less than 6% of the production for human consumption. Fiber in barley

The consumption of whole grain products is often related to beneficial effects on consumer health. Dietary fiber is an important component present in whole grains and is believed to be (at least partially) responsible for these health benefits.

There is growing interest for the use of barley in human nutrition, due to its high content of soluble fiber and associated positive health effects, such as reduced risk of cardiovascular diseases, type 2 diabetes, and colorectal cancer.

The total dietary fiber content of dehulled barley ranges from 10 to 28% on dry matter basis.

Barley is one of the excellent sources of soluble and insoluble dietary fiber and other bioactive compounds. Barley is very high in dietary fiber, particularly the soluble fiber portion. The soluble portion contains β-glucan, the same compound found in oats that has been shown to lower serum cholesterol.

Arabinoxylan or pentosans are also found in barley and constitute about one-half of the soluble fiber.

Soluble dietary fiber is located in the endosperm cell walls, while the (predominantly) insoluble dietary fiber fraction (cellulose, AX and lignin) is mainly found in the cereal bran. β-glucan and AX are typically present as 70 to 20% of the total dietary fiber content in barley.

Cereal β-glucan is composed of cellotriosyl and cellotetraosyl units linked through β -1-2 linkages.

Barley: Health benefits

Barley has received attention from health professionals for its fiber content particularly β-glucan which has been shown to reduce blood cholesterol and to produce a flattened glucose response. There is growing evidence supporting a role for dietary fiber in improving lipid metabolism and reducing glycemic index.

Therefore, consumption of barley whole grain or barley based foods has been associated with lower risks of cardiovascular disease, diabetes and some types of cancer.

The total dietary fiber in barley grain ranges form 11-34% out of which soluble dietary fiber share is 3-20%. Arabinoxylans, cellulose and β -glucans are the non-starch polysaccharides in barley and the major and important fraction being β -glucans. β-glucans are structural components in barley endosperm cell walls.

Barley grains also comprises of a wide range of phenolic compounds. The phenolic compounds function as free radical scavenger, reducing agent, quencher of singlet oxygen formation and potential producer of prooxidant metals.

Barley a minor cereal

Cereals are the edible seeds or grains of the grass family, Gramineae. A number of cereals are grown in different countries, including rye, oats, barley, maize, triticale, millet and sorghum.

Barley (Hordeum vulgare L.), originally from the Middle East, was one of the first plants domesticated for human consumption and was known for its vast geographical distribution. Barley has many uses, for instance it can be served as animal fodder, as base malt for beer and certain distilled beverages, and as a component of various health foods. It is used in soups and stews, and in barley bread of various cultures.

Pearled barley is eaten in soups and stews in the UK and in the Far and Middle East; barley is also used in bread (as flour) and ground as porridge in some countries.

The major parts of the barley grain are the endosperm, the embryo and their covering layers of maternal origin. The endosperm consists of the starchy endosperm and a surrounding aleurone layer (Figure 2). The starchy endosperm forms the largest morphological part of the barley grain comprising c. 75% of its weight. The function of the starchy endosperm is to serve as a nutrient storage for the growing embryo during germination.

Barley is characterized by a thick fibrous coat, a high level of ß-glucans and simply-arranged starch granules. World production of barley is about 30 % of that of corn. In comparison with corn, barley has more protein, methionine, lysine, cysteine and tryptophan.

Barley grain is an excellent source of soluble and insoluble dietary fiber (DF) and other bioactive constituents, such as vitamin E (including toco-tri-enols), B-complex vitamins, minerals and phenolic compounds.

Barley is also a rich source of tocols, including tocophenols and toco-tri-enols. Barley contains3-11% dietary fibers made up of pentosans, beta-glucan and cellulose. Barley has an attractive nutrient make-up which makes it an excellent food for health-conscious people.

Starch content in barley

Barley has starch content of 62.5%, a protein content of 7.5% and a low fat content of 1.2%.

Barley seeds were loaded with starch, that provides energy for seeds to grow into sprouts. It consists of hundred of sugar molecules linked together to form long chains. Starch is a polysaccharides, alpha-glucan and can be divided into straight-chain amylase and branched chain amylopectin.

These starch granules contain traces of lipids, minerals, protein and nucleotide.

The “diastatic” enzymes responsible for degrading the starch in germination are phosphorylase, alpha glucosidase, alpha-amylase, beta-amylase, debranching enzymes, and transglucosylase.

These starches in the endosperm are 95% deposited in 11-28 days after ear emergence and the ratio of amylopectin increases to the final ratio. Starch granules of the starchy endosperm are embedded in the protein matrix. This association of starch granules and protein in the starchy endosperm helps to give the endosperm its structure.

The starch granules in the barley endosperm are laid down within amyloplasts and fall into two size groups: 1.7-2.5 um and 22.5 – 47.5 um. About 90% of the starches granules are small and about 10% are large.

Large starch granules are composed of 25% amylose and 75% amylopectin. Small starch granules are reported to have similar contents of amylose and amylopectin but the very small starch granules (less than 4 um) can contain as much as 40% amylose.

In normal barleys the ration of amylase to amylopectin is about 1:3, in high amylase Glacier about 1:1 and waxy barley is 97-100% amylopectin.

Barley for human consumption

Together with wheat, rye and several important forages, like Russian wildrye and crested wheatgrass, barley belongs to the tribe Triticeae.

Barley is “winter hardy” and is able to survive in the frost of cold climates. It is used as a cooked cereal, or a hull of the kernel is removed by abrasion to create pearled barley (commonly used in soup).

Additionally, barley may be incorporated into breads pilafs of stuffing, or it may be used for malt production.

Production of malting barley ranks second after animal feed. It requires high quality grains that are not easy to produce everywhere but maintains or even increases its central position to supply the malting industry’s requirements.

In order to create malt, the barley grain is soaked in water to sprout the germ, and produce an enzyme that hydrolysis (break down) starch to a shorter carbon chain, maltose.

Maltose is then used to feed yeast and produce CO, and ethyl alcohol, since it is fermentable carbohydrate.

The alcohol and CO2 are important for brewing alcoholic beverages and for baking.

Dried malt is used in a variety of products including brewed, baked products, breakfast cereal, candies or malted milks.

Consumer following a gluten-free diet must avoid malt and should read ingredients labels to determine whether malt is an ingredient of a particular food product.

Barley cereals for health

Almost 20 years ago, a strong case was made for barley foods based in research showing health benefits and suitability for barley inclusion in food products.

It is generally accepted that diet rich in whole grains provide protection against hypertension, stroke, cardiovascular disease and type 2 diabetes.

Barley noted for their content of soluble fiber, which acts to alleviate and prevent these chronic disease.

Since that time, there have been minor changes increased usage of barley as a food largely through the efforts and increased awareness of barley by cereal scientist, nutritionists and grower supported organization.

Producers can benefit from incorporating the type of whole grains because they can be easily preserved even in bad conditions, such as a dry or cold medium.
